Chicken and Black Bean Enchiladas
This will give you an idea of how easy this was. I made two different pans of chicken enchiladas and it only took 45 minutes to do both.... and it was finished baking by the time we left to trick or treat. This was easier than getting the kids ready. I think it's harder to get teenagers ready - all the makeup and hair straightening. I don't even put make up on and she's trying to look like a beauty queen from the sandlot - which totally isn't real... I guess that's what Halloween is all about.
I found this recipe on Pioneer Woman's site - do you see a pattern here? Well I'm glad you do because I love her recipes, cooking show AND dishes at Walmart. Huge fan girl here. But here is the link to her Enchilada recipe but it is for ground meat. I decided to use smoked bbq chicken from Full Moon barbecue and added some black beans to make it nice and hearty. I had to split one pound of smoked bbq pulled chicken between two recipes. It really wasn't enough... next time I'll get a pound and a half. I think that would be perfect!
These were my favorite! I loved the sauce and the smokiness of the chicken was excellent. I wish I had some cilantro to add - I made a note to be sure to buy some fresh the next time I make these. Make these or make the PW's recipe - you will NOT be disappointed. It's delicious. My daughter asked me to teach her how to make these so when she leaves home to go to college, she will know how to live! She's all about her food!
