Green Chili Chicken Enchiladas
My stomach growled as my mind drifted through the memory of our semi-empty refrigerator at home. What to do about dinner? On Halloween night? There's always turkey sandwiches.... a great option for a too tired mom who has to pick up kids from carpool. The crock pot is ALWAYS a great option, if only I planned ahead of time and prepared THAT MORNING. Fantastic. I'm striking out people.
Then I remembered the two packs of corn tortillas sitting underneath the almost empty sleeve of stale while bread. Speaking of which, let me add bread to my grocery list while I'm thinking about it...
I wanted to try the Pioneer Woman's recipe for White Chicken Enchiladas but I was pretty much positive I didn't have ALL the ingredients listed in her recipe. No matter - I do what my mom taught me - work with what you have. With minimal time, I decided to stop by Full Moon BBQ and pick up some smoked or BBQ pulled chicken (sauce to the side) and whip up dinner. Turned out that the smoked chicken was INCREDIBLE in this recipe. I'll have to make it like this for all time. I typed out the recipe so I could remember the changes I made (very slight) and I'll add a link to it here.
To let you know how easy it was to make.... I also made some Chicken and Black Bean Enchiladas for dinner last night too. So we had both types of enchilada - and what surprised me the most is that there are no leftovers in the fridge! WOW! Success!
Please forgive me for the picture. Timing and lighting is everything... and I had neither last night. I had to use my iPhone AND it was so dark my kitchen lighting was most definitely on the "yellow" side. Not the most appetizing photograph and I didn't even have that pop of green you would get from fresh cilantro because my cilantro died. Had to throw the bunch away.
If you can find the Hatch Green Chilis - use them! I'm using them next time. The cheese sauce was gooey and so delicious. I want more but it's gone. Boo. Get the printable recipe HERE.
